It's very similar to this photograph, only mine has a graham cracker crust in addition to crushed mint chocolate on the bottom. (I love layers!)
For decoration, I placed in the center a few green spearmint leaf candies, plus a few red-hots to hopefully look like holly berries.
But moments before I began my work in the kitchen, the doorbell rang.
No, wait. It didn't. I don't have a doorbell. Oops. Let me start over!
Moments before I got started, there was a knock at the door. And it was Dad! He had a big smile on his face, and he was holding Mom's big food processor.
He had heard through the grapevine that this evening I was planning to do quite a lot. On my agenda: make a pie, do laundry, pack for the weekend, wrap gifts, re-pot a plant, walk the dog twice, pay my utility bills, and wash a sink full of dishes.
The trouble, unfortunately, was that it was already 8 PM. I had been out running errands beforehand, zipping through the grocery store, stopping by the convent to get mass cards, cruising through the drive-through to get cash, and the list went on. There was barely enough time to breathe!So, Mom, who is caring for my grandmother, dispatched Dad to the rescue.
We had a few mishaps, but all went well. I managed to get green food coloring everywhere. After I got the amount of cookies I needed, Dad dropped the remaining cookies all over the floor, although he was able to eat the one that had fallen directly on top of another, saving it from the dirt of my floor.
It was a fun-filled time, and the end result was delicious. Thanks for your company and help, Dad! And thanks for your thoughtfulness, Mom! I love you both!
